In a large bowl, combine the flour, yeast, and salt. Slowly add the lukewarm water until a soft, slightly runny dough forms.
Cover the dough with a towel and leave it in a warm place to rise for about 90 minutes, until it doubles in size.
Divide the dough into small balls (they should fit comfortably between your palms). Press the balls down on a well-oiled work surface and spread them out with your fingers until thin, about 0.5 to 1cm thick.
In a pan, heat a decent amount of olive oil. When hot, dip in each pie and let it fry for about one minute on one side and one minute on the other, until golden.
Place the fried pies on a platter. Sprinkle with sesame seeds or cinnamon to taste. Serve warm with honey.
