Gastronomic Tradition of Roumeli

Roumeli is famous for its long-standing tradition of meat roasting and its dynamic gastronomic identity. From everyday meals to grand celebrations, meat holds a central place in the region’s lifestyle and shared experiences.
According to folk tradition, the practice of roasting meat on the spit is associated with the kleftarmatoloi (klephts and armatoles), the mountain fighters who would skewer and feast when they were not at war, as well as with the Sarakatsani shepherds, who used the raw material of the area and cooked in the countryside, following their pastoral way of life.
A striking example is the Easter custom of the pits in Livadia, where large pits are dug in the neighbourhoods, fires are lit with vine branches and lambs are constantly roasted on spits, inviting everyone to join the celebration. Similarly, tavernas serve spit-roasted delicacies throughout the year. 
As livestock farmers, of course, the people of Roumeli had not only meat but also an abundance of dairy products, which they skillfully incorporated into their resourceful household cuisine. Milk, yogurt, today’s famous cheeses (katiki, formaela, feta, tsalafouti, apsimotyri, klotsotyri, etc.) have been the ingredients for delicious rustic pies, often combined with wild mountain greens, wrapped in hand-rolled pastry or batter. Among the most distinctive are the avgopita (egg pie), tarkasi (pumkin pie), blastos (greens pie) and galatopita (milk pie), but you will find many more on the tables of Roumeli. 
Older generations fondly remember trahana that was spread out to dry and handmade hilopites (traditional pasta) made by their grandmothers. These flavors remain very much alive today, alongside beloved regional dishes such as tsigarithres or paspalas—a pork specialty typically prepared at Christmas.
And if you find yourself craving seafood, simply head toward the coast—because Roumeli, after all, also embraces the sea.
