Soak the apricots in orange juice until they soften.
Sprinkle the meat with salt and pepper and sauté it in a pot until golden.
Add mustard, honey and 5-6 mashed apricots and let simmer for approximately an 1½ hours.
At the very end add the rest of the apricots.
