Wash and clean the nettles carefully, using protective gloves.
Blanch them in boiling water for 3 minutes, then drain well.
Sauté the onions in olive oil, then add the nettles, followed by the fennel. Season with salt and pepper.
Allow the mixture to cool slightly, then add the feta cheese.
Line the base of a well-oiled baking tray with a sheet of rustic pastry.
Spread the filling evenly over the pastry and cover with a second sheet. Seal the edges to prevent the filling from escaping, and brush the top with beaten egg.
Bake in a moderate oven for approximately 1 hour.
