Place the sifted flour in a large mixing bowl.
Add the olive oil, vinegar and salt.
Gradually add the water, mixing until a dough is formed that comes away cleanly from your hands.
Cover the dough with a tea towel and leave it to rest for 15 minutes before rolling out.
Divide the dough into five little balls.
On a lightly floured surface, roll each piece out with a rolling pin to the desired thickness.
