Grate the cucumber using the coarse side of a grater and place it in a large sieve to drain off excess liquid.
Sprinkle with half the salt to help draw out the moisture.
In a large bowl, mix the garlic with the olive oil and vinegar, then add the yoghurt.
Squeeze the cucumber well to remove any remaining liquid, add it to the bowl, and mix thoroughly.
Cover the tzatziki with cling film and keep it refrigerated.
