A semi-hard cheese with a delicate aroma that evolves depending on its maturation period, Parnassus formaela is made strictly with goat’s milk, sheep’s milk, or a blend of the two. Crucially, the milk must come exclusively from animals that graze locally.
While traditionally served grilled, you can also enjoy it fried, paired with jams or honey, in salads, and even in slow-cooked meals in traditional clay pots.
