A Culinary Journey on the Rock of Sidira
Folegandros, known in antiquity as Sidira, due to its rugged, rocky terrain, retains a deep-rooted gastronomic tradition that thrives amidst the precipitous cliffs of Hora and its hamlets. The local cuisine reflects the resilience of its people in the face of strong winds and a harsh landscape.
The Art of Bread
The island boasts a rich heritage in bread baking, with housewives traditionally baking the week's bread in wood-fired ovens burning brushwood. Baked goods that stand out include fouskoto, a lagana-style bread, namely oval, flat bread that is crispy on the outside and soft on the inside, and pavli, small, sweet, and crispy rolls filled with pumpkin. Lazarakia also hold a special place. These small bread rolls shaped like human figures, filled with raisins, were traditionally associated with Lazarus Saturday, but are now available year-round.
Authentic Pies
The pies of Folegandros are unique. The iconic sourotenia pie combines souroto cheese (soft cheese made from goat or sheep’s milk) and onions between two thick layers of pastry. Kalasouna is the typical local cheese pie, while manouropita is a pie made with rich mizithra (fresh whey) cheese and manouri (lightly salted and buttery) cheese. For those who prefer sweet flavours, kolokythenia is a yellow pumpkin pie with rice, raisins, sugar, and plenty of cinnamon that is an ideal choice, while the hortenia pie showcases the fresh wild greens of the island.
Renowned Local Cheeses
Souroto, a soft, white, salted cheese made from goat and sheep's milk, forms the basis for many recipes. The local manouri cheese (lightly salted and buttery) differs from its mainland Greek counterparts and serves as the raw ingredient for two more exceptional cheeses. Melichloro is made from salted manouri, dried on reeds, acquiring a semi-hard texture after two months. Skliro is a firm, piquant cheese that matures in the air for three months and is traditionally served on top of matsata, the island's renowned handmade pasta.
The gastronomy of Folegandros is an experience that reflects the passion of its inhabitants, offering flavours that linger as vividly as the image of Hora perched on the edge of a cliff.
