In a bowl, mix together the olive oil, lemon juice, oregano, thyme, mustard, salt and pepper.
Place the kid goat in a roasting tin or a lidded casserole dish and pour the mixture over it.
Using your fingers, rub the marinade well over the meat to coat it evenly. Add the water to the dish.
Cover the tin tightly with baking paper and aluminium foil, or cover the casserole with its lid.
Bake for 1½ hours in a preheated oven at 180°C (fan).
